Rice Paper Rolls with spicy peanut butter sauce

Rice paper rolls are such a lovely fresh dinner with all of the herbs! And great if you’re entertaining or picnicking πŸ™‚

This is my favourite way to eat them- but you can serially fill them with whatever you like! and if you have kids maybe leave the chilli out of the sauce… And fyi kids love making these! But it gets messy let me tell you..

Rice Paper Rolls with Spicy Peanut Butter Sauce

Serves: 2-20 Cooking Time: 30 mins

Ingredients

  • Rice Paper Rolls
  • Tempeh
  • Mixed vegetables- mushrooms, cucumber, carrots, avocado, sauerkraut, roast pumpkin
  • Herbs- parsley, mint, dill
  • Sprouts
  • Rice pasta- cooked
  • DRESSING
  • - 2 Tblsp lemon juice
  • - 3 Tblsp peanut butter
  • - 2 Tblsp soy sauce
  • - 1 clove garlic
  • - As much chilli as you can handle!

Instructions

Slice up all of your vegetables quite thinly

Layer in cooked rice pasta then top with your fav veges πŸ™‚

Blend all the dressing ingredients and enjoy

Notes

Put whatever you like into your rolls! Every time I make these each one is different πŸ™‚ My favourite one has rice pasta, tempeh, roast pumpkin, nutritional yeast, avocado and sprouts. YUM!
