A quick, easy, herby one pan wonder (that I sometimes have for dinner!) 🙂 Pack full of greens and delicious!
Herby green eggsPrint Recipe
- 1/4 onion
- 1/2 zucchini chopped
- 1 cup kale chopped
- 1/2 cup spinach
- 1/2 cup peas
- 2 brussel sprouts- shaved
- 1 clove garlic
- herbs- thyme, sage, parsley, rosemary
- 2 eggs
Start by browning 1/4 onion. Then add in all of your greens.
While they cook (just for a minute) get your herbs ready- add clove garlic, thyme, sage and rosemary- stir them in
Crack in 2 eggs then turn the heat down and lid on till cooked to your liking- about 2 mins
