Zucchini and Pea Soup

This recipe is such a good warmer in winter but, we discovered recently that also its delicious in summer as a cold soup! πŸ™‚ This soup is the perfect balance of creamy (thanks to the potatoes) and fresh (thanks to zucchini and herbs) and let me tell you, it tastes way better than it sounds!

Zucchini and Pea Soup

Serves: 4-6 Cooking Time: 30 min

Ingredients

  • 5 large zucchini
  • 3 potatoes
  • 300g peas
  • 1L organic vegetable stock
  • 500ml water
  • 1 large onion
  • 3-4 cloves of garlic
  • few sprigs of dill, parsley and thyme
  • pinch of chilli (if palpable)
  • tsp turmeric

Instructions

Start by browning your onion in a large pot, then add the chopped zucchini and potato- let these start to brown also

Add your stock, water and garlic cloves. Bring this to the boil, simmer for 10 minutes, then turn off the heat and it's ready to blitz!

I like my peas whole in this soup, so I add them after blitzing πŸ™‚
