Bean and Lentil Con Carne

Lentil and bean shakshuka with Harissa, thyme and nutritional yeast- one pan wonder, super easy, nutritional, and I bet the whole fam will love it!

Once you have made the base this mixture is so versatile and really handy to have in the fridge, I love taking two ladles of the bean mix into a frying pan, crack in two eggs, lid on for 5 mins and you have shakshuka! You can have it hot over roast vegetables or cold in a salad, it works for brekky, lunch or dinner πŸ™‚

Bean and Lentil Con Carne

Serves: 4-6 Cooking Time: 30 mins

Ingredients

  • 1 onion
  • 4 cloves garlic
  • 1 cup overnight soaked lentils
  • 1 cup overnight soaked red kidney beans
  • 1 can organic lima beans (or any other beans that you like)
  • 2 cans organic diced tomatoes
  • 3-4 sprigs of thyme
  • 2 Tblsp nutritional yeast
  • 1 tsp ground cumin
  • 1 Tblsp Harissa

Instructions

Start by sautΓ©ing the onion and garlic until translucent

Add everything else to the pan and simmer for 10-20 min

Serve with your favourite bread, a wedge of lemon, top with thyme and nutritional yeast
