Vegan Lamingtons

Happy nearly Australia Day!

I frigging love lamingtons! (and anything cake…) So I made you guys a vegan version πŸ˜‰

This recipe can also be made with a gluten free flour for all you gorgeous celiacs out there πŸ™‚ With gluten free, theΒ mixture will get a little thick, so just add a touch more milk to make it workable πŸ™‚

You can pretty mush use any chocolate with these- most will work πŸ™‚

Vegan Lamingtons

Serves: 6-8 Cooking Time: 1 hour

Ingredients

  • 2 cups organic self raising flour
  • 1 cup plant or nut milk
  • 2 Tbsp kombucha vinegar (or apple cider vinegar)
  • 1/2 cup coconut sugar
  • 2 Tbsp nativa
  • 1/3 cup coconut oil
  • 1 tsp vanilla powder or extract
  • 2 blocks of loving earth chocolate
  • Dessicated coconut to coat

Instructions

Heat oven to 180. and line a square baking dish with baking paper

In a large bowl beat the sugar, natvia, coco oil together

To this, add the remaining cake mixture and beat until smooth

Bake in square dish for 25-30 minutes- its done when a knife comes out clean

Let it cool then slice into squares

Lightly coat with loving earth chocolate then roll in coconut

Refrigerate then enjoy!

Notes

Lamingtons can be made with almost any chocolate- this one is vegan and my fav πŸ™‚
