Easter is one of the best times of the year! Its the last family holiday before it starts to get cold, my mum and sister have birthdays and its the first time in the year when spiced fruit is acceptable! Plus all of the chocolate… So many reasons to celebrate!
I LOVE spice fruit, especially spiced pancakes 🙂 This recipe has no added sugar- apart from the natural sugars in the banana and whatever toppings you choose to use.
The ingredients are designed to keep you full and nourish your body, while being tasty at the same time!
The eggs have a big dose of protein, banana’s are high in B6, potassium + vitamin C, chia for omega 3 and cinnamon helps to balance your blood sugar- which means you feel satisfied and, if you don’t have high sugar toppings, you won’t spike your blood sugar so you will have sustained energy.
But lets be honest, we are all probably going to eat easter eggs and do that anyway…

Easter Spiced PancakesPrint Recipe
- 3 mashed bananas
- 4 eggs
- 1 tsp chia (soaked in 4 tsp water)
- 1/2 cup almond meal
- 1/3 cup desiccated coconut
- 1/4 cup raisins
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp allspice
- Toppings: I used coconut yoghurt, bee pollen, maple and raisins.
Soak the chia for 10-15 min before combining all of the ingredients in a big bowl and mix thoroughly
Heat up a pan and have coconut oil handy 🙂
Cook your pancakes on a medium- high heat until bubbles come to the surface of the pancakes, then flip
Top with your favs and enjoy 🙂
