Spiced porridge with caramelised pears

How good is porridge on a freezing day!

I created this recipe in Sydney on a winter morning when it felt like zero degrees and all you want to do is stay in bed!Β So I made a cheeky porridge and hopped back in πŸ™‚

This one will warm you from the inside out with comforting spices, a little dose of good omega fatty acids and blood sugar stabilising action of cinnamon.

Spiced porridge with caramelised pears

Serves: 2 Cooking Time: 15-20

Ingredients

  • 1/2 cup oats
  • 1 cup almond milk
  • 1 Tblsp LSA
  • 1 Tblsp hemp seeds
  • 3 Tblsp coconut sugar
  • 3 Tblsp water
  • 1 pear
  • Cinnamon, nutmeg and vanilla to taste

Instructions

Start with the pears, slice them thinly (about 3-5ml) and create a caramel sauce in a pan with the coconut sugar and water, add the pear when this starts to simmer and keep stirring and turning until they are cooked through.

Combine oats, almond milk, LSA and spices into a pot and simmer until cooked through, at the end add a pinch of hemp seeds if you like them πŸ™‚

Plate up your oats, top with the caramelised pears and any remaining coconut-caramel sauce, jump back into bed and enjoy πŸ™‚
