Quinoa and coconut porridge with stewed berries

Just in time for slow Sunday mornings!

Did you guys know that quinoa contains all of the essential amino acids? Kinda makes it a super food right! So why not make it the star of a few meals πŸ™‚

For this recipe I decided to leave out the oats and seeds (for once) and let the quinoa shine πŸ˜‰ If you’re not the biggest fan of coconut milk you can also make this with almond milk (or any milk for that matter).

This is the perfect recipe to take back to bedΒ β™‘

Quinoa and coconut porridge with stewed berries

Serves: 2-3 Cooking Time: 20 mins

Ingredients

  • 1 cup quinoa- rinsed well
  • 1.5 cups coconut milk
  • 1/2 cup water
  • 1 tsp coconut sugar
  • 1 tsp honey
  • 1/2 tsp cinnamon
  • pinch nutmeg
  • vanilla pod seeds from 1/2 pod (or 1 tsp vanilla powder)
  • 1 cup blueberries
  • 1/2 cup chopped strawberries
  • banana for serving

Instructions

in a saucepan combine the quinoa, 1 cup of the coconut milk, the water, vanilla pod seeds, cinnamon and nutmeg. Bring all of this to the boil, then reduce the heat and simmer until most of the liquid us gone and the quinoa is cooked through. Take off the heat and stir through honey, coconut sugar and the rest of the milk.

For the berries- combine them in a small saucepan with 1-2 tablespoons of water and a pinch of cinnamon until the berries release their juices and are soft to the touch.

Spoon the quinoa into bowls and gently top with stewed berries, chopped banana and, if you like, coconut flakes.
