When your carnivorous dad likes a vegan dish, you know its good 🙂
Love that theres so many different types of pasta on the market these days! Edamame is one of my favourites! Ingredients: edamame. Thats it! love it ♡ Paired with the rich flavour of capsicum chard over a flame and cheesy deliciousness of nutritional yeast… yum!
This dish is so delish, they’ll forget its vegan 😉
Charred Capsicum sugo with edamame noodlesPrint Recipe
- 2 red capsicums
- 1/4 cup nutritional yeast
- 4 Tblsp extra virgin olive oil
- 1 garlic clove
- 1 Tblsp coconut flour
- salt and pepper to taste
- Edamame pasta (or pasta of your choice)
Start by charring your capsicum and garlic, if you're doing this over a flame be super careful! otherwise you can grill them 🙂
Once the skin has browned or blackened, pop them into an airtight container and let them sweat for 5 minutes or until cool, then peel off the skin and cut out the seeds.
Place all ingredients into a food processor until relatively smooth and then pour over cooked edamame pasta 🙂
